Ok so Adam brought home a salsa recipe to try. I guess he had it at a potluck at work last week and loved it. So he asked for the recipe. It's real simple to make. We made it last night and it's really good. So you all should try it. It makes a lot though, so you might need to share with someone! Enjoy!
Papa Jack's Almost famous Tex-Mex Salsa
Ingredients:
2- 28 oz. cans of whole tomatoes (don't use stewed tomatoes)
5 oz. can of sliced jalapenos
3 or 4 small to medium dried chilies
1 big healthy handful of fresh cilantro w/o stems (we uses 1 cup of it chopped up)
1/2 tsp. of garlic powder
1/4 tsp. black pepper
1/4 tsp. salt
4 or 5 tablespoons chili powder
Mix salt, garlic powder, pepper and chilies in blender first. Then add cilantro and jalapenos. Finally pour in 2 cans of tomatoes on top of everything. Blend until you have a smooth consistancy, but not too much to cause it to be soupy. Then pour contents into bowl. Add chili powder stirring to a nice blend. Now taste test with a chip. You can add more fire without changing the taste by adding in some cayenne pepper.
All this makes a blender full of salsa that will keep for over a week in the refrigerator.
